After seasoning, strips 2-3 cm thick are hung to dry in a specially ventilated room at controlled temperature and humidity. This guarantees a unique quality and usually takes five to six days. The meat loses about 40-50% of its weight.

The history of the biltong
The recipe was developed by the South African Boer Trekkers (afrikaans: trekboere, English: trekboers) during the time of the Great Trek (afrikaans: Groot Trek, English: Great Trek) between 1835 and 1841 in order to save the meat from spoilage on their long migrations maintain.
The Huns previously used this technique in Europe, salting and drying raw meat under the saddles of their horses. Dutch settlers in Namibia modified this method of production and hung the raw pieces of meat, well salted, in the airy hold of their horse-drawn wagons. Biltong vs. Beef Jerky

Biltong is air-dried in one piece for several days and only then cut into bite-sized pieces. Jerky is first cut and then dried in an oven, for example. Biltong is usually juicier than beef jerkey and contains more residual moisture.

Biltong is traditionally marinated in vinegar and spices, Jerky often has a dry and smoky flavor.
Another advantage of biltong is its very long shelf life without refrigeration. After opening, the snack can be stored in a paper bag in the refrigerator for 3-4 days.
